Cloves are a pungent warm spice with an intense flavour and aroma. The flavour comes from the compound eugenol. On the tongue, you’ll detect sweetness, bitterness, and astringency (drying the mouth), with a noticeable amount of heat. This spice is found in savoury dishes, desserts, and drinks. Ground or whole cloves flavour meat rubs and marinades, sauces, and rice dishes. It is often used along with cinnamon and nutmeg in sweet dishes, especially “pumpkin pie” flavoured items for the autumn and winter holidays, and in drinks such as mulled wine, cider, or chai.
In traditional medicine, a paste of cloves and rock salt added to milk was the antidote prescribed for headaches. They are also used as a major ingredient in some mouthwashes.
TRS Cloves are grown and have an intense flavour and a hot spicy finish and should therefore be dosed carefully. Mainly used to flavour pilaf rice and is an important ingredient in the mixture of garam masala.
